Gaeilgeorí is only considered an insult to people who are hostile to the language and it doesn't matter what you call it, they will still be hostile. I wouldnt base my choice of title to take that sort of persons feelings in to consideration. The very fact you are learning Irish would upset them.
scoláire being used to refer to primary school age, or pre teen students and Daltaí to teenagers and students from the collages.

viewtopic.php?f=28&t=4187&hilit=gaeilgeoir%C3%ADGaeilgeoir is used by native-Irish speakers to refer to those who speak school-Irish/ book Irish, well or badly. Similar to how
freisinín is used by speakers in Corca Dhuibhne to identify learners of Irish who visit the area. It seems to be a recently coined term as it is not found in Dineen.
I choose not to identify myself with the term. I prefer
foghlaimeoir, as Redwold has suggested. Or for speakers of Irish or Scottish Gaelic, I prefer the term
Gael.
