Maybe to help to keep the "s" in "is" as a true "s", because otherwise it might be lenited in fast speech and the meaning might not be clear to the listener?

Mmh, I think there are two forms,
1) the adverb éasca used with copula in fronting
E.g. Rinne mé go héasca … -> Is (go) héasca a rinne mé … = Easily I did …
Here the particle go is usually omitted but h is often retained in speech: Is héasca a rinne mé …

2) the adjective éasca used with copula, e.g. as a superative form
E.g. an rud is éasca = the easiest thing
Here I wouldn't expect an h.

...go mbeadh sé ar na rudaí is éasca...

Edit: D'fhéadfaí da ndéarna seachas a rinne a rá.

Maybe that's where I got lost, in fast speech. As I know "is éasca" is hard to say, it does sound more like two vowels coming together. On second thoughts though I think we pronounce it more like as if it were written "i séasca" the S going with the second word.
