Cairbre is a popular first name in Medieval Irish literature. There are a number of notable figures in Irish mythology who bear the name, though, I'm not sure to which one, if any, this place-name can be attributed.
Baile Uí Chairbre, literally translates to english as
Town of the descendant/grandson of Cairbre. That is to say, somebody named Cairbre gave his name as a surname to his descendants, Ó Cairbre. When one of them founded, or otherwise influenced this settlement, the town was named after them.
