I hope this is a simple one, but want to make sure (I'm English, so definitely in need of some expert advice!)

We are building a new house and want to call it "White Rose" or "White Rose House" in Irish (I am originally from Yorkshire, hence the White Rose)

We were thinking of simply "Rós Bán" to keep it short. Firstly, is this the correct spelling? Secondly, should it really be "An Rós Bán" - I ask this as I seem to see "An" in front of things more often than I would see "the" used in English.

If we were to go with "White Rose House" would it be "Teach Rós Bán"? (and again, would it be better if it was "An Teach Rós Bán"... although this feels a bit long for a house name).

Yes, An Rós Bán is much better.

In Irish, am I right in saying the use of the definite article is not quite as strong in meaning as in English? Like I said in the original post, it seems to me it is used more often?

You are on the right track.

Rós = A Rose
An Rós = The Rose

There is no Irish equivalent for plain old “rose”, it must be indefinite (a rose) or definite (the rose).
