Is this correct ?

faoi cheann na bliana is lae - and in Munster, would it be - fé cheann......? or would they say i gcionn?

1 - faoi cheann bliana is lae ( I assume both go in the genitive, but na is superfluous.

2- I daresay them Munster ones would say fé cheann alright, and I think i gceann/i gcionn is used everywhere. Perhaps a Mumhnach will confirm.

Anyway, given your Scottish background, shouldn't you feel more connected to Gaeilge Uladh, just a few miles across Sruth na Maoile?

Ah well - that's a long story - but when we went to Ireland a long time ago I found that I preferred the Corca Dhuibhne - but I realise you probably have an interest in declaring your preference for Donegal. We went there as well (in a green 2CV) and had to show our passeports to the soldiers armed to the teeth at the border... we had more than enough adventures there anyway, I can tell you that.
