I say, 'Thug sí é dom', but have seen 'Thug sí dom é'. As I am typing this, I realise that I also say, 'Tabhair dom é', but would never say 'Tabhair é dom' so it seems that I am inconsistent in my usage. Are both structures correct?

Yes, both are right. It may depend on the dialect. In Ulster we put the é/í/iad etc at the end of the clause, while in Munster I think they rather put them just after the subject. For Connachta I'm not sure.

That would sound odd to me. We put the "é" at the end in that case.
But substitute "é" with a noun and it's ok.

So you could say "thug sé leabhair dom," but would say "thug sé dom é," yes? That fits with what I learned.
