Bhí mé ag léamh alt ar Nós.ie inniu agus chonaic mé cúpla sampla den VN (bhoil shílim ar aon chaoi.)

1: Tá giotár á sheinm agus Gaeil i mbun ceoil.

2: Tá na buidéil fhíona á n-oscailt ...

I thought you use the above structure when the subject of the VN is a pronoun not a noun?

I'm assuming (perhaps wrongly) that you could say something like Tá tú ag seinm ceoil agus Gaeil i mbun ceoil?

The only other thing I can guess from my learner's eyes is that 1 could be "The guitar, you are playing it" 2 could be soemthing like "The bottles of wine, you are opening them..."

apologies if this is a simple fix but I'm still getting to grips with this structure of the VN

Yep, á = ag+possessive adjective (which does act like a pronoun)

Tá na buidéil fíona á (ag+a) n-oscailt

= The wine bottles are at their opening.

As per An CIonnfhaolach, it's literally "a guitar is at its playing" and "the bottles of wine are at their opening.

This is how you say something "is being done" in Irish, hence "a guitar is being played" and "the bottles of wine are being opened." (If you look at almost any other Western European language, this is the same way of thinking. You'll sometimes see it crop up in English as a translation error from French, Spanish etc).
