Strictly speaking, you should use the grammatical gender of the noun (though common sense trumps grammatical gender...you wouldn't use "sé" for a girl, for example, even though "cailín" is grammatically masculine). Usage can vary from region to region, though (some nouns may be masculine in one Gaeltacht and feminine in another), as can pronunciation (sometimes the sound of "sí" and "sé" can be very similar, especially to a learner). I've never heard of people not bothering to use the correct pronoun, though, other than when we're playing Fiche Ceist and the noun is unknown.
