I am looking for the translation of “Wolf among Sheep”.

I have looked into this and it seems the most common translation that comes up is “mac tíre i measc caorach”. If I just capitalize Wolf and Sheep or even add the sheep it changes the translation slightly to “Mac Tíre i measc na gCaorach”.

If anyone could please help confirm which version is correct and maybe also the reason for the change in the two, I would greatly appreciate it.

Capitalisation makes no difference whatsoever, but the presence of the definite article may - and does in this case - affect the following noun.

Wolf among Sheep - Mac Tíre i measc Caorach
Wolf among the Sheep - Mac Tíre i measc na gCaorach

Both are correct
mac tíre i measc caorach = a wolf among sheep
mac tíre i measc na gcaorach = a wolf among the sheep

The change (gcaorach) is called eclipsis in Irish grammars, a change of the intitial sound (/k/ -> /g/) due to the genitive plural article "na".

nominative singular: an chaora = the (one) sheep
genitive singular: na caorach = of the (one) sheep
nominative plural: na caoirigh = the (several) sheep
genitive plural: na gcaorach = of the (several) sheep

i measc = among, in the midst of
